Food is a highlight of the Fair — and this year, we’re joined by Chef James Diack, the force behind Coobs, Antonym, Il Contadino, and Il Cinghiale.
Known for his farm-to-table philosophy and seasonal menus inspired by his family’s Brightside Farm, his dishes bring the flavour of honest, local cooking to the Glenshiel gardens.
